I spotted this recipe for a crunchy lemon topped courgette cake a while back so I cut it out of the magazine and kept it in the back of my mind. So when I spotted a couple of courgettes in Ma's veg box last week I thought I must give it a go. Courgettes are most probably my favourite vegetable - grilled with pepper or sautéed with garlic - so why not in a cake? I made half the quantity in the given recipe, and swapped the plain flour for gluten free so Ma can enjoy it too. If you like carrot cake but I think this makes a great veggie alternative. Even if I do say so myself, it's delicious!
