Cake Tower
During a quiet and relaxing weekend, I often get the urge to bake something. Today I felt like a bit of experimentation, so I made up this recipe for chocolate nutty cupcakes. They're very basically:
4oz sugar creamed into 4 oz marg, pop in two eggs (from the chicks) and then mix in 4oz self raising flour. For the flavour stir in 1 tablespoon of cocoa powder, 2 tblsp of shredded coconut and a small handful of chopped mixed nuts (I used almonds, pine nuts and hazelnuts). Spoon into cake cases and pop in the oven for 15-20mins. Easy!
The pictures are taken with the cake stand which Steph and Lou gave me for my birthday!

Eye Eye
Yesterday we went on a champagne night flight on the London Eye. It was with a gaggle of my girls, most of which I have been friends with since starting secondary school aged 11, to celebrate our 21st birthdays (although now all but 3 are 22!). Twas a fun, though quick journey - London at night is beautiful, especially the Houses of Parliament. Steph, our party organiser guru, booked it up for us and also bought us each a delicious cupcake from the Hummingbird Bakery. A fabulous evening!

Primrose Treats
Having planned it yesterday, at lunchtime today we walked along the canal to Primrose Hill to visit the Primrose Bakery. I've heard of it, having seen the cookbook, but visiting it's very cute and sells a plethora of delicious cupcakes. Aaron had lemon, I had ginger fudge and Emma had carrot cake. I think it's going to be a regular destination on our lunchtime jaunts!

Sexy Cupcakes
Well I have been pretty useless at the whole blogging thing over the past few weeks. Even though I haven't got (much) work to do, the compiling of my cv and portfolio for getting one of those "job things" greatly beckons.
I saw these delicious looking cupcakes via Frankie and they're by ming makes cupcakes. The photos just make them look so enticing! From top left clockwise: sour cream fig, mango and coconut, ginger and cream cheese, and eton mess.
