Crunchy Courgette

I spotted this recipe for a crunchy lemon topped courgette cake a while back so I cut it out of the magazine and kept it in the back of my mind. So when I spotted a couple of courgettes in Ma's veg box last week I thought I must give it a go. Courgettes are most probably my favourite vegetable - grilled with pepper or sautéed with garlic - so why not in a cake? I made half the quantity in the given recipe, and swapped the plain flour for gluten free so Ma can enjoy it too. If you like carrot cake but I think this makes a great veggie alternative. Even if I do say so myself, it's delicious!

First Attempt

So I have just had my first go at screenprinting! I only did these two little samples using my own handcut stencil but I think I need to practise a bit more before I go into any sort of production! Practice makes perfect...

Summer Holiday!! Three friends and I are off to the airport in a bit, we're going to Turkey! We're leaving the drizzle and clouds of beloved England and heading to the sun, sea and sand of Gumbet. To get myself into the holiday mood, yesterday I made a new sunglasses case!See you in a week!
